Indian cuisine is famous for the flavors it has in store to offer and for that matter Indian cuisine is known a lot for the desserts that they offer. Sweets are something every Indian loves and each state and city will have a dessert that represents them. Indian food in Sunnyvale is loved for Kheer specially an Indian variation for the classic rice pudding and I can bet on it that it's as tasty as easy it is to cook it.
Kheer is an Indian version of rice pudding cooked with milk and sugar, flavored with nuts and saffron.

Ingredients:
●    ¼  to ⅓ cup rice
●    3 tablespoons sliced almonds
●    4 cups whole fat milk
●    ¼  cup sugar
●    1 teaspoon butter
●    12 strands of saffron
●    Pinch of ground cardamom
●    2 tablespoon sliced pistachios

Method:
1.    In a non-stick pan, melt the butter on medium heat.
2.    Wash the rice, changing water until the water appears clear and soak for 5 mins.
3.    Add the rice and stir-fry for 2 mins in the butter
4.    Add the milk, cook until the rice is tender and the milk is creamy and reduced to half the quantity. Stir to ensure the milk does not burn at the bottom of the pan.
5.    Add the sugar, saffron, cardamom powder, almonds and pistachios and let simmer for a few more minutes and this will infuse the flavors in the kheer.
6.    Turn off the heat.
7.    The kheer is ready to be served hot.
8.    Once kheer cools of will become thicker in texture. Kheer can be served chilled and that will taste creamier and more delightful.
