When we talk about Indian cuisine, we always think of the typical North Indian Punjabi curries or the South Indian dosa and idli that we get the Indian restaurant in Fremont, or butter chicken or Tandoori chicken or paneer tikka masala, but Indian cuisine is much more than that Indian food it always a grain affair whenever we talk about it, Beat on special Indian festival or particulars occasions like birthday or wedding, or even just a small get together party, food is always a Grand Affair when it is Indian cuisine and  Indians are planning it.

There are delicacies certain Which are symbolic to certain festival occasions for example Undhiyu is made on Makar Sankranti, Shera or semolina Halwa is made during Pooja for worshipping of God as prashad. Many of the delicacies that are cooked in Indian cuisine are seasonal and so if you even get those delicacies in the Indian restaurants in Fremont they are going to be typically seasonal as where the particular vegetable or particular kind of jaggery of particular increasing there is a core of the delicacy is available.  Like Undhiyu, is cooked using winter vegetables, like snow peas, fenugreek Greens, potatoes, yams, sweet potatoes, brinjal, tomatoes, onions, garlic, ginger, spring onions, spring garlic, any other season vegetables I used to Spice and cook the special vegetable delicacy which is like a fusion of many vegetables cook together usually it is eaten with Puri or you can even have it a loan top up with some sev and eat it.  usually it is accompanied with Jalebi and amazing in in desert.
